Each year, the arrival of Autumn fills the kitchens of Andalusia with flavours that are true delicacies for the palate.

Dishes are made using chestnuts, wild mushrooms, quince and game, the raw ingredients of the season  offering an array of succulent results when properly combined which help us to understand Andalusia in a whole new way.
