Jerez is world-renowned for its wine. For the town, this precious 'treasure' is much more than just a beverage; it is the culture of a people, a way of seeing life.

Jerez wine is a natural product, unique in the world. The fine, liquid gold is ever-present at the Jerez Fair; you will be able to enjoy it in the marquees together with delicious tapas, cheese and fish.

There are many types of Jerez wine: Fino, oloroso and amontillado make up a wide variety of styles and tastes.

FINO: The most delicate of Jerez wines; especially when it is pale, with minimum alcohol strength and elegantly dry. It is made exclusively from the Palomino grape variety.

MANZANILLA: It can be described as a peculiar fino from Sanlúcar de Barrameda, with a fresh and floral aroma and an exciting and characteristic saline note.

AMONTILLADO: Wine that undergoes a complex aging process, first as fino, but at a certain point the alcohol gains strength and it loses its film of ‘flor’ yeast.  This wine is drier to taste, with a silky texture and sensual elegance.

OLOROSO: Oloroso wine does not develop the film of ‘flor’ yeast. It has a rich colour, old gold and mahogany, and a fragrant aroma with highlights of wine fruit, walnuts and toasted almonds. It has a full taste that endures, thanks to the noble tannins of its character. 

PALO CORTADO: An oloroso wine of special features, full-bodied but with the freshest and sharpest aroma of an amontillado. Good palo cortado wine cannot be obtained by technical methods, because it is the result of the natural evolution of the wine towards this original style.

RAYA: It is an oloroso wine of more modest features, full-bodied but with a less fragrant and delicate aroma.

PEDRO XIMÉNEZ: This wine is a treasure. It is made exclusively with ‘Pedro Ximénez’ variety grapes, which are aired to enhance their richness.

CREAM: This wine is obtained by mixing dry oloroso and sweet Pedro Ximénez.

MUSCATEL: It is made exclusively from Muscatel grapes. The Muscatel wine from the neighbouring town of Chipiona is legendary, thanks to its high quality.
