Cookies and Chocolate Tart

Ingredientes

For 10 people
  • 200 g. of 70% chocolate coating
  • 300 ml. cream
  • 12 egg yolks
  • 200 g. sugar
  • 0.05 g. vanilla sugar
  • 2 l. whole milk
  • 120 g. cornflour
  • Rectangular biscuits
  • 1 cup white coffee
  • 1 pastry bag

Preparation

Warm the milk, leave a little aside to mix with the cornflour, the egg yolk and the sugar.

Before the milk starts to boil, add the mixture we made earlier, stirring constantly so it does not form lumps. Do this over a low heat.

Once it has a creamy texture, we remove it from the heat.

Then, put it into the pastry bag and leave aside.

Cover the base of a container with biscuits and brush the biscuit layer with the white coffee.

Then, cover that with the mixture in the pastry bag, and so on until the container is full.

Warm the milk, cream and chocolate coating over a bain marie, stirring without letting it boil.

Lastly, remove it from the heat and, while it is warm, cover the top layer with it.
