Gazpacho

Ingredientes

  • 2 kg. ripe tomatoes
  • 1 green pepper
  • 2 garlic cloves
  • One handful of breadcrumbs from vinegar-soaked bread
  • 2 dl. (more than 1/2 c) olive oil
  • Water and salt
  • Optional: Very tiny dice of cucumber, pepper, onion and hard-boiled egg, or ham and fried bread

Preparation

Put all the ingredients except the water in the bowl of a mixer. Beat them together into a fine purée, then pass the mixture through a cheesecloth and add cool water to taste.

Then you can add a salsa of chopped onion, cucumber, pepper, hard-boiled egg and tomato, or chunks of Serrano ham and fried bread. Or don't add anything and drink it out of a glass any time of day.
