NATURE. TRADITION OF WINE


The natural Geopark located in Guadix (Granada) is recognized for its geological history. The indelible stone evidence of a river and a lake active for approximately 5.3 million years, transports us 450,000 years ago, to an endorheic stage, in which the water had no fluvial outlet to the ocean. The subsequent exorheic stage, of sediment erosion, continues to this day and is responsible for the thousands of gullies that currently characterize the modeling of the Geopark.



In this unparalleled setting, the vineyards of Granada are located at an altitude of 1,200 meters above sea level. Grape production has traditionally been linked to the upper and middle areas of the province's mountain systems. The significant seasonal and inter-zone thermal differences at different altitudes are key and determining factors in the ripening times of the grapes and in the final product: the wine.


The wine culture is historically rooted in the Granada area of ​​Guadix, given the widespread extension of crops by the Romans. It is not surprising that we find an underground cellar surrounding the Cathedral of Guadix. In the Muslim era, Granada wine watered the nights of the Caliphate and the Kingdom of Granada. There is evidence of this in the Alhambra, in the Wine’s Door (‘Bid al-jamra’), where the inhabitant of Granada in the 16th century deposited the wine they consumed.


The Troglodytic Habitat has been one of the defining elements of the Guadix region since Antiquity, in which prehistoric man sought security in caves. Later settlers would discover caves in La Hoya de Guadix and in the valleys of the Gor and Fardes rivers, with Guadix being the largest concentration of cave houses excavated in prehistoric times in the reddish clay soil characteristic of this region and which today contrasts with the white openwork of the caves.



Today they have become a comfortable stay with cool temperatures in summer and warm in winter. The caves have all the comforts of a four-star hotel: restaurant, pool, Wi-Fi, toy library, playground. Also, from a nearby forest and a beautiful viewpoint overlooking the badlands, banks of a prehistoric river.
