San Antón stew

Ingredientes

For 6 people
  • 300 g. white beans
  • 300 g. dried broad beans
  • 100 g. rice
  • 1 small onion
  • 1 garlic head
  • 1 pig spine bone
  • 1 ham bone, ribs, blood sausage, tail, ear, aged bacon and cheek bacon, all from pork

Preparation

The night before, soak the broad beans and the white beans.

Put all the ingredients in a pot with water, except the blood sausage and the rice. Cook it together over a low heat, skimming the water occasionally. When everything is tender, add the rice and the blood sausage, bringing it to a gentle boil.

Serve very hot.
