Easter Papajotes

Papajotes

"Papajotes" are balls of deep-fried dough that look like fritters and during Lent they are usually prepared in towns all over the province of Jaén, especially in towns up in the mountains, such as Cazorla, Segura and Mágina. They can be enjoyed as a dessert, breakfast or snack, accompanied by a good cup of hot chocolate. This is a tradition in all homes. 

Ingredientes

For 4 people
  • 250 ml full-cream milk
  • 250 gr wheat flour
  • 1 egg
  • 1 tablespoon soda or baking powder
  • A pinch of salt.
  • Sugar
  • Extra virgin olive oil

Preparation

In a large deep bowl, beat the egg, add the milk and then whisk again. Add the flour little in by little in at least three batches while continuing to whisk. When all the flour has been mixed in, add the soda or baking powder and whisk again.

Add plenty of olive oil to a frying pan and when it is hot add the dough a spoonful at a time and then keep turning them until they are golden all over.

When they are ready, we take them out and drain them well. Once drained, coat them in sugar and they are ready to eat.

They can be eaten on their own or with a cup of hot chocolate.
