Vinería San Telmo

Vinería San Telmo located in Seville, with one of the peculiarities of Vinería San Telmo being the quantity and quality of the wines to be found in the restaurant. Tarquini is devoted to travelling throughout different regions of Spain in search of wines that are not easily found in the commercial circuit.

The lunch menu of Vinería San Telmo is created by the head chef, his partner (José Vicente Flores Gallardo), Tarquini's wife, Reyes Moreno (also the pastry chef), and Tarquini. After several test rounds, this team meets and decides what to include in the new menu. Approximately once a year, new tapas are included in the "New Menu Items" section. According to Tarquini, “the complicated thing is to remove tapas from the menu to make way for the new ones, but somehow we manage to do it. Although sometimes, upon the request of our clients, we must bring back tapas or dishes that have been removed during another season.
