In this article we are going to take a look at the flavours of the Seville countryside cuisine with an illustrious restaurant in the city of Carmona, Molino de La Romera, located just a few meters from the city's Parador (state-run hotel) and built on an old Moorish mill that's over 500 years old, the essence of which the building still preserves and which was once the café, old stables and storerooms where the grain was stored, which still has the hatches to pass the grain from one place to another.

Traditional cuisine, which has been around forever in the area, in a unique and privileged setting, according to the manager, where you can order a half portion of "Landscape in sauce”, or a "Viewsof syrup” tapa. Why? We'll tell you right now.

The dish is prepared with pumpkin and courgette, which we now call pisto, but without adding the tomato, which came after the American conquest. Another typical dish from the Seville countryside of Carmona,is undoubtedly the spinach with chickpeas.

The countryside is fertile, producing many products that can be found in the typical cuisine of the area, and in this case, spinach with chickpeas is one of star dishes of the area. The presence of vegetables on the menu of typical countryside dishes is undeniably but there is also an abundance of meats from the Sierra Norte mountains of Seville, which makes your mouth water just looking at it.

Grilled octopus, which here at the Molino de la Romera is spectacular, soft, with an excellent char-grilled touch and a smooth creamed potato which, as we say here: "takes your breath away".

And of course the desserts, always with a touch of Muslim pastries, the most typical being the millefeuille, the sweets from the convent of the Order of St. Claire, the orange desserts with oranges from the Carmona meadow, and "la torta inglesa”, or the English cake, a sponge cake with cider and a very thin layer of puff pastry whose name comes from George Bonsor, when he was in Carmona excavating the Necropolis and asked his servant for "la torta" which over time became "la torta inglés".
