Cooperativa Vitivinícola Aguilar de la Frontera
Cooperativa Vitivinícola Aguilar de la Frontera is situated in the Cordoban town of Aguilar de la Frontera, as its name indicates.
It forms a part of the Montilla-Moriles Denomination of Origin, with vineyards in the areas of Aguilar, Monturque, Montilla, Moriles and Cabra. The variety it mills is one hundred percent Pedro Ximénez.
At the Cooperativa Vitivinícola Aguilar de la Frontera they produce two types of wine: the first, or the yolk, comes from the juice run-off from the loading of the press, which is destined for the production of its fine wines; and the second, or the colour, comes from the press squeezing process. This system produces fine wines of exceptional quality, especially as they are separated and the grapes selected according to quality, before being milled independently.
