Iberian pork, cheeses, mushrooms, vegetables from the garden and 5J Jabugo ham are the stars of some of the best cooking in the province of Huelva.

When describing the typical dishes of the Sierra de Aracena and the finest cuisine in the area, we couldn't think of a better place than Linares de la Sierra. Specifically the restaurant Arrieros, one of the most important cuisinesin the province of Huelva, reasonably priced and sure to meet the expectations of the most demanding palates. So that's where we went. It was time to put a face, and of course, flavours, to some of the famous Iberian products of the area, cooked by our friend Luis Miguel, the owner of the restaurant.

As soon as we walked through the door of the restaurant we were stunned to have come across a place like this. Rustic, cocket, with a good fire... eating in these surroundings is glorious!

Our mouth was watering from just reading the menu: Iberian pork cheek in red wine, scrambled eggs with black pudding and prawns with a touch of vanilla, espoleá, a very typical dish in this mining area, vegetable pie with bell peppers, sirloin stuffed with ham foie, the famous gazpacho soup and of course, an excellent 5J Jabugo ham, which couldn't be missing from our table and is essential in this area. Don't forget that you are in the land of ham!

The typical dishes of the Sierra de Aracena obvious revolve around the Iberian pork which there are dozens of recipes. The cheeses, seasonal vegetables and wild mushrooms complement the majority of the local produce, always decorated with our liquid gold: olive oil.

By recommendation of Luis Miguel, we began with a prey carpaccio with foie and vinegar from the county.

We followed this with a tomato soup with vegetables from the garden, and everyone who tries it observes a minute of silence before trying it. You can take our word for it. Exquisite.

From the garden we move onto a good piece of toast with Aracena goats cheese with honey and aromatic plants. 

Iberian pork roast with potatoes and salt flakes.

And finally a delicious seasonal mini poultry and wild mushroom hamburger.

Do you have a sweet tooth? Then you have to try the quince. As you may know, quince is a classic in this area and is used in many of the desserts in the Sierra de Aracena. This picture is quince in puff pastry with a lemon mouse. Delicious.
